Cranberry Pomegranate Baked Brie

This is such a beautiful looking baked brie and has such a lovely flavor! Bonus, it’s gluten free for all of your gluten free guests! This is sure to be a hit at your next holiday party!



Serves: 10-12

Prep/Cook time: 20 minutes

  • 8 oz wheel of brie

  • 1 cup cranberries

  • 2 tbsp sugar

  • 1/4 cup honey

  • 1/4 cup pomegranate juice

  • zest from 1 orange

  • 1/2 cup pomegranate arils

  • 1 tbsp coconut oil/avocado oil/olive oil

  • 1/2 cup pecans, chopped

  • 1 tbsp fresh rosemary, chopped

  • kosher salt

  • for serving: toasted bread, crackers. apples


Preheat oven to 350 degrees. Place brie on an oven safe pan or baking dish.

Combine cranberries, sugar, honey, pomegranate juice and orange zest in a small saucepan. Heat over medium heat and simmer for 10-15 minutes, remove from heat and add pomegranate arils.

Place brie in the oven and bake for 9-10 minutes.

While brie is baking, heat oil in a small pan over medium heat. Add chopped pecans and cook for 4-5 minutes, stirring to help avoid burning. Remove from heat and pour into a bowl, adding your chopped rosemary and kosher salt to taste. Toss well to combine.

Remove brie from the oven, top with cranberry mixture and place pecan mixture on top. Serve with bread, crackers and sliced apples.
