These pancakes are so fluffy and delicious. I always double the recipe and freeze the leftovers for the kids to eat throughout the week.
- 1 tbsp vinegar
- 1 cup milk
- 1 1/8 cup flour (I do half white flour and half whole wheat flour)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4-1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 egg, beaten
- 1 tbsp maple syrup
- 1 tsp vanilla
- 2 tbsp butter melted
Pour milk and vinegar together in a small bowl, stir and set aside.
Mix dry ingredients together in a large bowl.
Pour milk mixture, egg, vanilla, maple syrup and melted butter into dry ingredients and mix until just incorporated.
Pour mixture onto a skillet or pan sprayed with cooking spray/coconut oil in 1/4 cupfuls.
