Overnight oats are one of my favorite breakfasts, especially if I know that I will be busy and need something quick in the morning. You can make a few servings of this and they keep well for the whole week in the refrigerator. They can be eaten cold or heated up in the microwave in the morning!
Prep time: 5 minutes
1/2 cup rolled oats (you can use gluten free oats as well or even quick cooking steel cut oats)
1/2 cup milk, almond milk or coconut milk
2 tbsp pumpkin puree
1/4 tsp pumpkin pie spice
1/4 tsp vanilla
1 tsp ground flaxseed
1 tsp chia seeds
2 tsp maple syrup
Optional: chopped walnuts, hulled hemp seeds, pepitas, ground cinnamon for topping or a drizzle of maple syrup
Place all ingredients in a container that has a lid (tupperware or mason jar), give it a quick stir, put the lid on and refrigerate overnight. Eat cold in the morning or heat up in the microwave until warm.
