Pumpkin Spice Overnight Oats

Overnight oats are one of my favorite breakfasts, especially if I know that I will be busy and need something quick in the morning. You can make a few servings of this and they keep well for the whole week in the refrigerator. They can be eaten cold or heated up in the microwave in the morning!



Serves: 1

Prep time: 5 minutes

  • 1/2 cup rolled oats (you can use gluten free oats as well or even quick cooking steel cut oats)

  • 1/2 cup milk, almond milk or coconut milk

  • 2 tbsp pumpkin puree

  • 1/4 tsp pumpkin pie spice

  • 1/4 tsp vanilla

  • 1 tsp ground flaxseed

  • 1 tsp chia seeds

  • 2 tsp maple syrup

  • Optional: chopped walnuts, hulled hemp seeds, pepitas, ground cinnamon for topping or a drizzle of maple syrup


Place all ingredients in a container that has a lid (tupperware or mason jar), give it a quick stir, put the lid on and refrigerate overnight. Eat cold in the morning or heat up in the microwave until warm.
