Cottage Cheese Crepes

These crepes are so delicious!  I love to make a double batch of these on the weekend and have breakfast for both Saturday and Sunday already done but you easily triple or quadruple it for even more! With just a few ingredients, and endless fillings and toppings, these quick-to-make crepes feel like the perfect treat, even though they are all healthy ingredients!



Makes: 1 serving (3, 1/4 cup crepes)  

  • 1/2 cup cottage cheese
  • 2 egg whites
  • 1/4 cup oats (or gluten free oats)
  • 1 tbsp milk (or dairy-free milk of your choice)
  • 1 tsp vanilla 
  • butter or coconut oil for pan


  • nut butter of your choice
  • coconut butter
  • sliced banana
  • berries
  • granola
  • chopped nuts
  • yogurt 


  • cinnamon
  • fresh squeezed orange juice or grapefruit juice
  • maple syrup
  • chopped nuts
  • butter


Place cottage cheese, egg whites, oats, milk and vanilla in a blender and blend until completely smooth.  

Heat small amount of butter or oil in a crepe pan or other small pan over medium heat.  Pour 1/4 cup of batter in the middle of the pan and swirl until it spreads out into a thin circle.  You can also use a spatula to help spread the batter if your batter is a little thick.  Cook for about 2 minutes on one side, flip and cook for an additional minute.  Remove from pan and set aside while you cook the other 2 crepes.  

Fill with choice of fillings, roll up, add your toppings and enjoy!
