Hooray for breakfast! These Cauliflower Hash Browns are so good as is and even better served with a fried egg or two over top! They keep well in the refrigerator and heat up well in the toaster oven.

Prep time: 35-40 minutes
1 (about 3 cups) small head of cauliflower, grated fine (you can use a food processor or cauliflower rice but you really want the cauliflower fine so they hold together better)
1 large egg
3/4 cup shredded cheddar cheese
1/4 tsp cayenne pepper
1/4 tsp garlic powder
1/2 tsp salt
1/8 tsp black pepper
optional: chopped green onion
Preheat oven to 400 degrees. Grease a large baking sheet or line it with a silicone baking mat.
Grate the whole head of cauliflower and place in a large, microwave safe, bowl.
Microwave on high for 3 minutes and let cool so it doesn’t burn you. Wring out the water with paper towels and place in a large mixing bowl. Add the egg, cheese, cayenne pepper, garlic powder, salt and pepper and stir well to combine.
Form cauliflower mixture into 6 equal patties, making them into a rectangular shape (or really whatever shape you want). Bake for 15-20 minutes until edges are golden brown and tops are firm. Let cool for a few minutes and serve.
Store in the refrigerator and heat in the toaster oven if not eating immediately.
