I’m always trying to find ways to use leftover cheese like mascarpone or ricotta that I have so it doesn’t just end up in the trash. My kids absolutely love pancakes and these were a huge hit! Win-win!
1 cup white flour (use a 1-for-1 GF flour if GF)
1 1/2 tsp baking powder
1/2 tsp salt
2 tbsp sugar/coconut sugar
1 tbsp poppy seeds
1 cup milk
1 tsp vanilla
1/2 cup mascarpone cheese
1 cup diced strawberries
Heat griddle to 300 degrees, or set aside a large pan if you are not using a griddle.
Combine flour, baking powder, salt, sugar and poppy seeds in a large bowl and mix to combine.
Combine egg, milk, vanilla and mascarpone in a medium bowl and whisk well.
Pour wet ingredients into dry ingredients and mix well with a spatula, making sure to break up large clumps of flour but try not to over mix. Fold in diced strawberries.
Pour 1/4 cup amounts onto a buttered griddle or pan and cook for 4 -5 minutes on each side.
Serve warm with butter, maple syrup and fresh strawberries!
