I love finding healthier desserts that I feel good about feeding my family (and myself) and that still taste like a treat and not some cardboard "dessert". These are super easy to make and they have been a huge hit at my house. You can add chocolate chips to make them extra delicious or just leave them as is, because really, they are awesome just plain.
- 1 cup natural peanut butter
- 1/4 cup + 1 tbsp maple syrup
- 3/4 tsp vanilla
*optional chocolate chips*
Preheat oven to 350 degrees. Place peanut butter, maple syrup and vanilla in a food processor and blend just until mixed. I find that if you blend it too long the mixture gets dry. If this happens add another drizzle of maple syrup and give it a pulse or two to mix it in. Add chocolate chips and give them another pulse to incorporate them.
Drop spoonfuls of dough onto a cookie sheet sprayed with cooking spray or lined with a silicone baking liner. Press down with a fork in a cross pattern and bake for 10 minutes. Cool until they are firm enough to be removed. Enjoy!
