Peanut Butter Salted Caramel Truffle (GF)

Yum yum yum!!!  These are so good!  With only 5 ingredients they are easy to make and with no refined sugar they make you feel a little better about eating more than one!  I highly recommend taking them out of the freezer 10-15 minutes before eating them to allow them to warm up a little bit so they have the gooey texture of caramel.  Enjoy!

Ingredients

  • 1 pound (16 ounces or about 1 1/2 cups packed) Medjool dates, pitted
  • 1/2 tsp sea salt + more for topping
  • 1/4 cup natural salted peanut butter (creamy is best, but crunchy works, too)
  • 1 heaping cup dark chocolate chips
  • 1 Tbsp melted coconut oil

Directions

Put pitted dates in a food processor and blend until they form a dough ball.  If your dates are too dry you can soak them in warm water for 10-15 minutes before blending or you can add a little bit of warm water to the dates while they blend.  Add 1/2 tsp salt and pulse a few times to mix.  

Once the dates are well blended take a bit of dough (you can use a melon baller or spoon, I prefer just to use my hands) roll into a ball and place on a parchment lined baking sheet or plate.  Once all of the dough is rolled into balls, place them in the freezer for about 30 minutes.

Near the end of the freezing time, prepare your peanut butter.  If your peanut butter isn't runny enough, place it in a microwave safe dish and microwave it for 20 seconds.  If that hasn't softened it enough, add a teaspoon of coconut oil and mix.  Remove tray from freezer and top each ball with peanut butter.  Return to the freezer for another 25 minutes.

Before removing from the freezer, prepare your chocolate.  Combine chocolate chips and coconut oil, microwave for 30 seconds, remove and stir.  Microwave for another 30 seconds, remove and stir...repeat if necessary.  Once the chocolate has melted, remove balls from the freezer and roll them in the chocolate.  Return them back to the tray and top with salt.  Once they have all been coated, put them back into the freezer for another 20 minutes, until chocolate has hardened.

Let sit at room temperature for 15 minutes before serving, they are good right out of the freezer but so much better once you let the peanut butter warm up a bit.  Enjoy!
