Almond Joys (GF)

Hollllllly cow these are amazing!  I have to say, these are better than the store bought version.  Please give these a try, they are so easy and so yummy.  This makes a large batch, about 40-45 of these so it's great for a party dessert or you can cut the recipe in half to make a smaller batch.

Ingredients

  • 14oz sweetened condensed milk
  • 14oz unsweetened coconut flakes
  • pinch of salt
  • 1 cup dark chocolate chips
  • raw, unsalted almonds (I prefer them lightly toasted)

Directions

Combine sweetened condensed milk, coconut flakes and a pinch of salt in a large bowl and stir to combine.  Put in the freezer for 10 minutes.

Line a baking sheet with a silicone baking mat or line with parchment paper.  Remove bowl from the freezer and roll portions of the coconut into balls or ovals (whatever your preference).  I did mine in about 1 1/2 tbsp sized portions.  Wetting your hands with water a bit makes the coconut a little easier to roll.  Place on the lined baking sheet and put in the freezer for about 20 minutes.  

Place chocolate chips in a double boiler and melt over low heat, stirring often.  Remove rolled coconut balls from freezer, roll in melted chocolate with a fork and place back on baking sheet.  Top with an almond and place back in the freezer for 25-30 minutes or until the chocolate has completely hardened.  Store in the freezer or refrigerator in an airtight container.
