These really are the best brownies ever! I pretty much always have the ingredients for these brownies on hand, I usually try to keep unsweetened baking chocolate in the house but that's the only thing that I usually need to make sure that I have. Now that I have started to make all of my brownies from scratch I just can't bring myself to make brownies from a store bought mix anymore, these really are that much better!
- 8 tablespoons of butter
- 2 ounces unsweetened chocolate, roughly chopped
- 1 cup sugar (I like to use coconut sugar)
- 2 eggs. beaten
- 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- 1/4 cup flour (I have used Cup 4 Cup gluten free flour with great results)
- 1/2 cup semi-sweet chocolate chips (I like to use 1/4 cup semi-sweet/dark chocolate chips and 1/4 cup peanut butter chips or if you want to go a healthier route you can drizzle 2-3 tbsp melted natural peanut butter on top and swirl it in with a knife before baking)
Preheat oven to 325 degrees and line an 8x8 pan with parchment paper.
Combine chocolate and butter in a medium pot over low-medium heat, stirring often with a wooden spoon.
Once melted and well combined, turn off heat and add 1 cup of sugar. Stir in eggs, vanilla and salt. Stir in flour and mix until all ingredients are combined. Stir in chocolate chips.
Pour into prepared pan and bake for 35-45 minutes (I generally bake mine for about 37 minutes because I like them slightly underdone).
