Strawberry Banana "Icecream" (GF, Dairy Free)

This is such a light and refreshing dessert and it's free of refined sugar!  


  • 2 bananas, sliced and frozen
  • a few handfuls of strawberries, sliced and frozen
  • coconut cream (this is the cream from the top of a can of unsweetened coconut milk after it's been refrigerated)
  • 1 tsp vanilla extract


Add frozen banana and strawberry sliced to a food processor.  Add coconut cream.  Pulse and blend until smooth.  If you need to thin it out more, add a little of the liquid left over from the can of coconut milk.  Once smooth, add vanilla and blend until mixed in.  

Serve immediately or place in a covered dish in the freezer.  Remove from freezer about 15 minutes before wanting to serve.  Top with sliced strawberries, mini chocolate chips or chocolate sauce or just eat plain.
