Peanut Butter Cups (GF)

Hooray for "healthy" desserts!  These were quick to whip up and super easy to just store in the freezer and take them out to eat when you want one...maybe a little too easy.  


  • 1 cup creamy natural peanut butter
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup maple syrup
  • 1/2 cup coconut oil, melted

Combine peanut butter, maple syrup and coconut oil in a glass measuring cup and mix until well combined.  Pour into a muffin tin (either mini or traditional) and place in the freezer for 10 minutes.  

While the peanut butter mixture is cooling, combine cocoa powder, maple syrup and coconut oil and mix.  Remove peanut butter from the freezer and pour chocolate mixture over top, making sure to evenly cover them.  Put back in the freezer for another 30 minutes and remove when you are ready to eat them!
