No-Bake Peanut Butter Bars (GF)

These Peanut Butter Bars are always a huge hit!  They are one of most requested desserts by far.  They are easy to make gluten free and easy to make because you don't even have to bake them!


  • 6 tbsp unsalted butter, room temperature
  • 5 tbsp packed brown sugar or coconut sugar
  • 1 1/3 cups creamy peanut butter
  • 1/2 cup graham cracker crumbs (use GF graham crackers if GF)
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 2 cups confectioners sugar

*Chocolate Glaze*

  • 8 ounces dark chocolate chips, chopped
  • 5 tbsp heavy cream
  • 1/2 tsp vanilla 


Line an 8x8 pan with parchment paper, making sure to leave some overhang around the sides.

Beat butter in a stand mixer, add brown sugar and beat until well combined.  Add the peanut butter, graham cracker crumbs, vanilla and salt and beat until combined and creamy.  Add confectioners sugar, 1 cup at a time and mix until just combined.

Pour into prepared pan and press down, making sure to spread the mixtures into all of the corners.  Set aside.

Combine chocolate chips and heavy cream in a small pot, heating over medium heat and stirring often.  Once melted, remove from heat and add vanilla.  

Pour over peanut butter mixture, spreading it out with a spatula.  

Place bars in the freezer for 1 hour, cut and store in the freezer or refrigerator until ready to eat.
