Well, I think I've died and gone to heaven. These are amazing! So rich and flavorful, simple to make and so incredibly good! My cookies came out super dark because I used dark chocolate unsweetened cocoa powder instead of regular but either one is fine, I just prefer really dark chocolate. I highly recommend adding the touch of salt to the top, it really helps bring these to the next level.
Makes 16 cookies
- 1/2 cup coconut oil, melted
- 3/4 cup coconut sugar
- 1 large egg, room temperature (to do this quickly, place egg in a cup of warm, not hot, water while you prep other ingredients)
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup unsweetened cocoa powder
- 1 cup semi-sweet or dark chocolate chips or chunks
- sea salt for topping
Preheat oven to 350 degrees.
Combine melted coconut oil and coconut sugar in a bowl and mix until well combined. Add egg and vanilla and stir.
Add baking soda, salt and cocoa powder and stir until combined. Stir in chocolate chunks/chips.
Spray a cookie sheet with coconut oil spray or other non stick spray or use a silicone baking mat. Drop cookies into 16 cookies balls, pressing them down very slightly and topping with sea salt. If you want your cookies to be thicker, place in the freezer for 15 minutes prior to baking.
Bake for 10 minutes, remove and let cool on the cookie sheet for 10 minutes before moving them to a cooling rack.
Enjoy and try not to eat the whole batch in one sitting!!
