Chocolate Coconut Bars

I loooove dessert as you probably already know.  Coconut and chocolate is one of my favorite combinations!  These are incredibly easy to make and are delicious!


Serves: 12

  • 2 cups unsweetened shredded coconut
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 1/4 tsp kosher salt, plus more for topping
  • 1/2 cup dark chocolate chips


Line a tupperware (I used a plastic 6 1/2" square) or small pan with parchment paper.

Place everything, except chocolate chips, in a blender and blend until smooth.  Scrape down the sides at least once to make sure everything gets incorporated.  

Pour into your prepared pan and press down, making sure to spread out to all of the edges. Place in the freezer for 15-20 minutes.

Melt chocolate chips in a double boiler or microwave.  

Remove coconut from freezer and pour chocolate over top, spreading it evenly with a spatula.  Sprinkle top with coarse salt if desired and place back in the freezer for 30 minutes or until chocolate is hardened.

Lift parchment paper out of your container and cut into squares.  Enjoy!
