These cookies are so simple to make and are so good! This healthier cookie still hits the spot but totally feels like you are cheating!
Makes 14 Cookies
- 1/2 cup unsweetened shredded coconut
- 1/2 cup raisins
- 1/2 cup walnuts, chopped
- 1/2 tbsp coconut oil
- 1 cup dark chocolate chips
- coarse salt for topping
Combine shredded coconut, raisins and walnuts in a medium bowl and toss.
Combine coconut oil and chocolate in a small saucepan or double boiler and heat until melted.
Remove from heat and pour over dry ingredients. Stir well to make sure everything is evenly coated.
Drop cookies onto parchment paper or silicone baking mat, sprinkle with salt, and place in the refrigerator or freezer until hardened. Store in the refrigerator or in a cool place.
