These healthy vegan oat bars are a delicious treat that won't set you back in your diet.
Makes 20 bars
- 3 cups oats (gluten free or regular)
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- pinch of ground cloves
- 1 cup canned pumpkin (not pumpkin pie mix)
- 2 tsp vanilla extract
- 1/2 cup unsweetened applesauce
- 1/2 cup dark brown sugar
- 1 tbsp coconut oil
- 1/3 cup chocolate chips + 2 tbsp for topping (vegan or regular)
Preheat oven to 350 degrees. Spray 8"x11" or 9" square baking pan with cooking spray.
Place oats in a blender and blend until it resembles flour. Make sure you scrape down the sides at least once.
Measure out 2 1/2 cups of oat flour and place in a medium bowl. Whisk in baking powder, baking soda, salt, cinnamon, nutmeg and cloves and set aside.
In a separate bowl or standing mixer, whisk together pumpkin, brown sugar, vanilla, oil and applesauce until it's smooth and creamy. Slowly add oat flour until just combined.
Gently fold in 1/3 cup chocolate chips with a spatula. Pour batter into prepared pan making sure to spread it evenly into all corners. Sprinkle top with 2 tbsp of chocolate chips.
Bake for 15-25 minutes or until a knife inserted into the center comes out clean. Timing will depend on what size pan you use. Check at 15 minutes and go from there. Remove from oven and let cool before cutting. Enjoy!
