Cheesecake Bites

These adorable little Cheesecake Bites were fun to make, they look super cute and they were so good! They are the perfect little treat to bring to any gathering.

Ingredients

Makes 64 bites

Prep time: 10 minutes, Cook time: 30 minutes, 2+ hours cooling time

*Crust*

  • 1 1/2 cup graham cracker crumbs (GF graham crackers work great too)

  • 5 tbsp melted butter, cooled slightly

*Filling*

  • 2 (8oz) packages cream cheese, at room temperature

  • 3/4 cup sugar

  • 1/8 tsp salt

  • 2 tbsp cornstarch or arrowroot flour

  • 2 eggs, at room temperature (you can place your egg in lukewarm water for 10 minutes)

  • 1 tsp vanilla extract

*Chocolate Coating*

  • 8 oz dark chocolate, roughly chopped

  • 2 tbsp coconut oil

Directions

Preheat oven to 325 degrees. Line an 8 in square baking pan with parchment paper. Set aside.

Combine graham cracker crumbs and melted butter in a large bowl and mix with a spatula until well incorporated. Pour mixture into prepared pan and press down firmly, making sure to get the crust to all of the corners of the pan.

Place room temperature cream cheese in a large bowl and beat until smooth with a hand mixer or standing mixer. Add your sugar, salt, cornstarch or arrowroot, eggs and vanilla and beat well, making sure to scrape down the sides as you go. Pour filling into prepared crust and bake for 28-30 minutes. To test, lightly jiggle the pan and the center should only barely wobble. Let cool for 20 minutes. Cover with plastic wrap and refrigerate for 2 hours.

Remove from refrigerator and remove by pulling out the parchment paper. Slice into bit size pieces, about 1 inch each.

Place chopped chocolate and coconut oil in a double boiler or microwave safe bowl. Heat over medium-low heat or heat in 30 second increments, stirring between each set, until chocolate is well melted. Hold cheesecake bites by the bottom and dip, at least halfway, into the chocolate. Place on a piece of parchment paper and repeat until all bites have been dipped. Let cool on the counter or place in the refrigerator to harden.
