I LOVE these cookies! With only 4 ingredients, they couldn’t be easier to make and they really hit the spot when I want a treat! These were even a hit with my husband and all of my kids so I count that as a major win!
Serves: 20-25 cookies (this batch make 23 cookies for me)

Nutrition for 1 cookie: 75 cals, 5g fat, 1g net carb, 3g protein
1 cup natural creamy peanut butter
1 large egg, lightly beaten
1/2 cup monk fruit sweetener
1 tsp vanilla extract
Preheat oven to 350 degrees. Line a baking sheet with parchment paper or a silicone baking mat.
Combine peanut butter, egg, sweetener and vanilla and stir well with a spatula.
Roll mixture into balls and place on your baking sheet. Using a fork, press down on the balls in opposite directions to make a crossing pattern. Bake for 12-15 minutes, until the tops begin to turn brown. Let cool for 5 minutes before removing to a wire rack. Store in an airtight container.
