Oven "Fried" Chicken (Gluten Free)

This is by far one of my family's favorite meals.  My kids devour it, it's easy to bring with you for picnics, has almost no cleanup, it's great for leftovers the next day, it's cheap and it's delicious every time!  It's a good meal to have your kids help you make.  There are just a few ingredients that you throw in the bag and they can help you shake it up!

I buy the family packs of drumsticks when they are on sale and freeze them in 2 gallon bags, putting 6-7 drumsticks in each bag.  This makes it easy to make a kind of last minute dinner on the weekends because I always have the ingredients to make it and it saves me from going to the store on a Saturday when I would rather be doing just about anything else.  Give this one a try, I guarantee that you will love it.

  • 1 package of 6 or 7 chicken drumsticks
  • 1/3 cup of almond flour
  • 2 teaspoons paprika
  • 2 1/2 teaspoon celtic sea salt
  • 1/2 teaspoon fresh ground pepper
  • 1 teaspoon curry powder
  • 2 teaspoons herbs du provence
  • 3 tbsp of butter


Preheat oven to 450. Mix up the almond flour and spices in a large zipper bag.  Line a pan with tin foil (I wouldn't skip this step because it's really hard to clean the pan without it). Put the butter in the pan, put in oven to melt while it's preheating. Take the pan out after a minute or two, one the butter is melted and spread it around with a spatula to cover the pan. Put the drums (2-3 at a time for the big ones) in the bag and shake. Place chicken in pan. Bake for 30 minutes then flip and bake for 30 more minutes.
