This was a good twist on the normal chicken dish.. It had an interesting combination of flavors and was simple to make. I highly recommend letting this chicken marinate overnight to really soak up the flavors.

- 5 chicken thigh cutlets, skin on and bone in (around 2.5lb / 1.2kg) (Note 1)
- 4 garlic cloves, crushed
- 2½ tbsp fish sauce
- 2½ tbsp oyster sauce
- 1 tsp white pepper, ground
- 3 tbsp finely chopped basil leaves
- 1 tbsp ground turmeric
- ¼ cup brown sugar (or coconut sugar)
Combine marinade ingredients in a bowl or a gallon ziplock bag. Marinate for at least 3 hours, preferably overnight.
Remove chicken from the refrigerator an hour before cooking. Preheat the oven to 350 degrees.
Line a baking sheet with parchment paper or tinfoil. Bake for 50-60 minutes, until the tops are golden brown.
Remove from oven and serve.
