Paleo Coconut Curry Chicken

This was really quick to make and it was so good!  We aren't paleo so I served it over rice but you could absolutely eat it over quinoa or just have it plain if you are strictly paleo.  I will definitely be making this again!

Serves: 2


  • 2 chicken breasts
  • 2 tbsp olive oil
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 1 can unsweetened coconut milk
  • 3 tbsp red curry paste
  • 1 tsp fish sauce
  • 1 tsp coconut sugar (or regular sugar)
  • 2 tsp fresh ginger, grated
  • 1/4 tsp ground turmeric
  • handful of cilantro or chopped basil


Cut up chicken into bit sized pieces.

Mix coconut milk, curry paste, fish sauce, sugar, ginger and turmeric in a bowl or measuring cup, mix well and set aside.

Heat 1 tbsp oil in a skillet over medium-high heat and saute until cooked through and browned, adding salt and pepper to taste.  

While chicken is cooking, add onion and garlic to a separate pan with 1 tbsp oil and saute over medium heat until onions start to become translucent.  Add coconut milk mixture, bring to a boil and lower to a simmer.  

Once chicken is cooked, add to coconut and onion mixture and simmer for about 10 minutes.  

Stir in cilantro or basil or you can top with fresh herbs later.  

Serve plain or over rice or quinoa.
