Sheet Pan Fajitas (Gluten Free)

Fajitas are traditionally very easy to make but this takes it one step further and throws everything on one pan together to cook in the oven.  This is a great recipe to use when you have a lot of other things going on and you can't necessarily stand over a pan to actively cook.  They were simple and tasty and a big hit all around.

Serves: 4



  • 2 tsp chili powder (1 tsp ancho chili powder, 1 tsp regular)
  • 1 1/2 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground coriander
  • salt and pepper to taste


  • 1 1/2 lbs boneless skinless chicken breast, cut into strips
  • 3 bell peppers (red, yellow and green), cut into strips
  • 1 medium yellow onion, sliced into strips 
  • 2 cloves garlic, minced
  • 3 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 3 tbsp cilantro, chopped

  • tortillas
  • sour cream
  • avocado
  • shredded cheese
  • chopped tomatoes


Preheat oven to 400 degrees.  Spray a baking sheet with olive oil or cooking spray.  

Combine all ingredients for seasoning in a small bowl.  Set aside.

Layer onions, peppers and chicken on your prepare baking sheet.  Sprinkle seasoning, garlic and olive oil over top and toss to coat.  Spread ingredients out bake in preheated oven for 20-25 minutes, tossing once or twice during that time.  

Remove from oven, drizzle lime juice over top, sprinkle with cilantro and give it a quick toss.  

Place filling in your tortilla and top with your favorite toppings.
