Grilled Shrimp Tacos

I LOVE shrimp and I LOVE tacos, so naturally I needed to put the two together.  These are simple and flavorful without busting your diet!


Makes 6 Tacos

*Avocado Salsa*

  • 2 avocados, diced
  • 1/4 cup red onion, finely diced
  • 1/2 jalapeno, seeded and diced
  • 3 tbsp cilantro, chopped
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • salt and pepper to taste


  • 24 large shrimp (1/2-3/4 lb), peeled and deveined
  • wooded or metal skewers
  • 1 tbsp olive oil
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • 1/4 tsp salt
  • 1 clove garlic, minced
  • 1 tsp fresh lime juice
  • 6 flour or corn tortillas
  • optional toppings: shredded red cabbage, crumbled Cojita or feta cheese


Combine all ingredients for the avocado salsa in a bowl, mix well.  Cover and refrigerate until ready to use.

Preheat grill to medium-high heat.

In a large bowl combine marinade ingredients.  Add shrimp and toss to evenly coat.  Let sit while grill preheats.

Thread shrimp onto skewers and grill for 2-3 minutes on each side.  

Warm tortillas in the microwave or in a pan if desired.

Place shredded cabbage in the tortilla, top with shrimp, avocado salsa and cheese.  Serve with a lime wedge and enjoy!
