Paleo Grilled Chicken with Strawberry Avocado Salsa

This was such a simple and refreshing dish!  The strawberry avocado salsa added such a different flavor making this a recipe that I will definitely be repeating.  

Ingredients

Serves: 2

*Chicken and Marinade*

  • 2 boneless skinless chicken breasts, pounded with a meat mallet to make chicken a uniform thickness
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp cilantro, finely chopped
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1/2 lime, juiced

*Strawberry Avocado Salsa*

  • 1 tbsp red onion, finely diced
  • 1/2 cup fresh strawberries, chopped
  • 1 tbsp cilantro, finely chopped
  • 1 tsp jalapeno, finely diced
  • 1/2 avocado, chopped
  • 1/2 lime, juiced
  • salt to taste

Directions

Combine chili powder, cumin, salt and pepper in a small bowl and rub on both sides of chicken breasts.  Combine cilantro, garlic, olive oil and lime juice in a bowl and stir.  Add chicken breasts to the bowl, flipping to coat, cover or place all ingredients in a ziplock bag and refrigerate for at least 1 hour before cooking.

For salsa, combine all ingredients in a small bowl and toss.  Cover and refrigerate until ready to eat.  

Heat grill or grill pan over medium-high heat and spray with olive oil.  Cook chicken for 10 minutes on eat side.  The cook time depends on how thick your chicken is so if it is not pounded out increase the cook time by 5 minutes per side or until the internal temperature reaches 160 degrees).

Remove from heat and top with salsa.  Serve with a lime wedge and enjoy!
