Chicken Meatballs with Pineapple Sauce

These baked chicken meatballs were really good with a sweet and spicy kick.  The pineapple BBQ sauce is versatile and I can see using it for a variety things being thrown on the grill this summer.


Serves: 3-4

  • 1 lb ground chicken
  • 1 egg
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • salt and pepper to taste
  • 1/2 of a pineapple, diced
  • salt and pepper to taste

*Pineapple BBQ Sauce*

  • 2 tbsp ketchup
  • 1/8 cup soy sauce/tamari/coconut aminos
  • 1/2 tbsp fresh ginger, grated
  • 1/4 cup pineapple juice
  • 1/2 tbsp garlic, minced
  • 1/4 tsp crushed red pepper flakes
  • 1 tbsp raw honey
  • salt and pepper to taste


Preheat oven to 475 degrees.  Line a baking sheet with parchment paper.  

Combine ingredients for BBQ sauce in a small pot and simmer for 6-8 minutes until the ingredients are well combined and the sauce begins to thicken. 

Combine ground chicken, egg, paprika, onion powder, garlic powder and salt and pepper in a medium bowl and mix well with your hands.  

Form meatballs, using about 2 tbsp per meatball and place on the parchment paper.  Bake for 12-15 minutes, until the meatballs are cooked through.

Cook the diced pineapple in a large pan for 2 minutes, adding the cooked meatballs once they are removed from the oven.  Pour BBQ sauce over them, cooking for an additional 4 minutes.  

Serve plain, over rice or in a roll.
