Bruschetta Pork Kebabs

This was such a great recipe to break me out of my pork tenderloin rut.  Don't get me wrong, I LOVE pork tenderloin.  It's easy to throw in a crockpot and it's cheap but there are only so many pulled pork recipes you can make.  These kebabs were so flavorful and are perfect for summer with the fresh cherry tomatoes and sweet balsamic vinegar.  


Serves: 6

  • 2 lbs pork loin, cut into 1/2 inch cubes
  • 1/3 cup olive oil
  • 3 cloves garlic, minced
  • 1/2 tbsp Italian seasoning
  • 1 pint cherry tomatoes
  • 1 medium red onion, cut into chunks
  • 1/2 cup balsamic vinegar
  • 3 tbsp chopped fresh basil
  • salt and pepper to taste
  • skewers, if using wooden skewers, make sure to soak them in water for 30 minutes prior to cooking to prevent burning


Place pork cubes, olive oil, minced garlic and Italian seasoning in a gallon storage bag.  Toss well to coat and let marinate for at least 30 minutes.  If you are marinating longer than that stick the bag in the refrigerator until ready to use, otherwise you can just leave it on the counter.  

Preheat your grill over medium heat.  

While your grill is preheating, pour balsamic vinegar into a small pot and heat on the stove until it begins to simmer.  Allow it to simmer for about 5 minutes or until the liquid is reduced by half.  

Thread pork, cherry tomatoes and onion chunks onto the skewers, making sure to alternate.  Sprinkle with salt and pepper and grill for 4-5 minutes on each side.  During the last 2 minutes of cooking, brush skewers with balsamic reduction.  

Remove from the grill and sprinkle with chopped basil.  Enjoy!
