I really love sweet potatoes in just about any form but I am really loving sweet potato noodles. They give you those good, healthy carbs and are naturally gluten free and they are so flavorful! Plus, I will take any excuse to put Thai peanut sauce on something!
Prep time: 20-25 minutes
2 tbsp avocado oil or olive oil
2 chicken breasts (12-14oz), cut into 1 inch cubes
salt and pepper
2 sweet potatoes, spiralized (you can find pre-spiralized sweet potato noodles in most major supermarkets)
2 cup broccoli, cut into bit sized florets
1/4 cup water
Toppings: chopped peanuts, chopped green onions, chopped cilantro or basil
*Thai Peanut Dressing*
2 tbsp peanut butter
3 tbsp chicken broth
1 1/2 tbsp low sodium tamari or soy sauce
1/2 tbsp rice vinegar
1 tsp chili garlic sauce
1 tsp sesame oil
1/4 tsp ground ginger
1 clove garlic, minced
Combine dressing ingredients in a small bowl and mix well and set aside.
Heat 1/2 tbsp oil in a large pan over medium high heat. Add your chicken cubes and sprinkle with salt and pepper. Cook for 8-10 minutes, stirring often, making sure chicken cubes are cooked through and evenly browned. Remove chicken onto a plate and set aside.
Lower heat to medium and add 1 - 1 1/2 tbsp of oil. Add your sweet potato noodles and broccoli and saute for 5 minutes. Add 1/4 cup of water and saute for an additional 4-5 minutes. Add your chicken back to the skillet and pour peanut sauce over top. Toss well to coat. Heat for an additional minute before placing in bowls or plates.
Top with additional toppings and enjoy!
