This delicious baked Cod recipe is so fast to make and is so flavorful. I paired it with some roasted cauliflower rice and a simple Greek Salad.

4 cod filets, 5oz each
4 garlic cloves, minced
1/4 cup fresh parsley, chopped
5 tbsp lemon juice
5 tbsp olive oil, divided
2 tbsp butter, melted
1/3 cup almond flour
1 tsp ground coriander
3/4 tsp paprika
3/4 tsp ground cumin
3/4 tsp salt
1/2 tsp pepper
Preheat oven to 400 degrees.
Mix lemon juice, 4 tbsp olive oil and melted butter in a bowl and set aside. Make sure it is big enough for you to dredge the cod fillets in it.
Mix almond flour, coriander, paprika, cumin, salt and pepper in a large bowl and set aside.
Lay cod on a cutting board and pat dry with paper towel.
Head 1 tbsp oil in an oven safe skillet. Dip cod in lemon juice mixture, shake off and put it in the almond flour mixture. Shake off and add to pan. Repeat with other fillets. Cook for 3 minutes on each side.
Add minced garlic to the remaining lemon mixture and pour over the cod. Place in the oven for 10 minutes.
Remove from oven, top with chopped parsley and enjoy!
