Steak Kebabs with Basil Chimichurri

BBQ season is here!! I love anything on a kebab and it’s easily one of the most requested meals from my kids. This was easy to put together, make sure you give yourself 30-60 minutes for the steak to marinate….it’s worth it, trust me.

Serves: 4

Prep time: 20 minutes + 1 hour to marinate

  • 1 1/2 lbs sirloin steak, cut into 1 inch chunks

  • 1/4 cup olive oil

  • 1/3 cup red wine vinegar

  • 2 garlic cloves, minced

  • 3 tbsp parsley, chopped

  • 1 tsp red pepper flakes

  • 1/2 red onion, cut into large chunks

  • 3 bell peppers, cut into large chunks

  • salt and pepper

*Basil Chimichurri*

  • 1 garlic clove

  • 1 tbsp shallot, minced

  • 1 cup basil leaves, chopped

  • 1 1/2 tbsp red wine vinegar

  • 1 tbsp lemon juice

  • 1/4 cup olive oil

Combine olive oil, red wine vinegar, minced garlic, chopped parsley and red pepper flakes in a large bowl. Whisk and add the steak chunks, tossing well to evenly coat. Marinate for 30-60 minutes. If you are using wooden kebabs, soak them in water while the steak is marinating.

Once steak is done marinating, arrange steak, onion and bell pepper chunks on your kebabs, alternating ingredients. Preheat grill over medium high heat. Once preheated, place kebabs on and grill on each side for 4-5 minutes.

While kebabs are on the grill, place all of the ingredients for the basil chimichurri in a blender or food processor and blend until just smooth, don’t over blend.

When kebabs are done, place on a serving platter and drizzle with the basil chimichurri sauce or you can serve it on the side in a dish as a dip.
