It's amazing how just a little bit of meal prep can make each day of the week that much easier. This simple recipe will give you 4 days of amazing lunches and only takes about 20 minutes to put together.
Makes 4 portions
- olive oil
- 1 lb ground turkey
- 1/2 cup onion, minced
- taco seasoning packet or homemade seasoning posted below
- 1 cup frozen corn
- 1 cup canned black beans, rinsed and drained
- 1 cup cherry tomatoes, chopped
- 8 cups spring mix
- optional: shredded cheese, chopped avocado, crushed chips, taco sauce, salsa
- 1 tbsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp dried oregano
- 1/2 tsp paprika
- 1 1/2 tsp ground cumin
- 1 tsp salt
- 1 tsp black pepper
Heat a large skillet over medium-high heat and drizzle with olive oil. Once hot, add your minced onions and saute for 2 minutes. Add the ground turkey and chop with a spatula to separate the meat. Cook until almost all the way cooked through, about 7 minutes. Add your seasoning packet or homemade seasoning and mix well and cook for an additional 2 minutes, adding a little water if you want to make your turkey a little more moist.
While your turkey is cooking, chop tomatoes and prepare other ingredients . Place 2 cups of lettuce in each container and top with 1/4 cup black beans and 1/4 cup chopped cherry tomatoes and cheese if desired. If you plan to reheat the meat before eating, place 4 oz ground turkey in a separate section or container and mix with 1/4 cup frozen corn. If you do not plan to reheat you can add the ground turkey and frozen corn right on top of your lettuce mixture. Cover and refrigerate until ready to eat.
Reheat meat in a skillet or microwave if desired and place on top of your salad. Top with crushed chips, avocado, salsa or taco sauce and enjoy!
