This bread is so moist and flavorful! It’s perfect for a quick breakfast in the morning with some butter or a drizzle of honey or for a little snack later in the day.
Prep time: 15-20 minutes, bake time 45-50 minutes
2 cups almond flour
1/4 cup coconut flour
1/4 cup coconut sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/2 cup unsweetened coconut flakes
1/3 cup coconut oil, melted
1/4 cup maple syrup
1/2 cup carrots, shredded
1/2 cup apple, finely diced
1/2 cup raisins
1/2 cup chopped walnuts
Preheat oven to 350 degrees. Grease a bread pan, making sure to get all the way up the sides. Set aside.
In a large mixing bowl, combine almond flour, coconut flour, coconut sugar, baking powder, baking soda, cinnamon, salt and coconut flakes.
In a separate bowl, whisk together coconut oil, eggs and maple syrup. Fold in carrots and apples. Carefully add the wet ingredients to the dry ingredients, making sure to get all the way to the bottom. Fold in the raisins and walnuts.
Pour your batter into your loaf pan and spread with a spatula.
Bake for 45-50 minutes, until a toothpick inserted in the middle comes out clean. Let cool for a full 15-20 minutes before removing from the pan.
