I really love sweet potato fries and the flavor and texture of these is just perfect!
Prep Time: 1 hr 15 minutes
3 medium sweet potatoes, cut into strips (no need to peel them!)
3 tbsp olive oil
2 1/2 tbsp ground cumin
1 tbsp arrowroot powder (or cornstarch)
1 tsp garlic powder
1 tsp salt
1/2 tsp chili powder
1/4 tsp pepper
Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
Place sliced sweet potatoes in a large bowl. Toss with olive oil. Add cumin, arrowroot/cornstarch, garlic powder, salt, chili powder and pepper and toss well to evenly coat.
Spread the sweet potatoes in a single layer on your prepared baking sheet. Bake for 1 hour, flipping over 30 minutes in.
