Cheesy Cauliflower Mash

I have really found a new love for cauliflower recently. I am not a huge fan of eating it plain but it really does serve as a great alternative for regular mashed potatoes and this recipe is sure to convert you!



Serves: 6

Nutrition: 100 calories, 7g fat, 4g net carbs, 5g protein

Prep Time: 15 minutes

  • 1 large head of cauliflower, chopped (mine was about 26oz)

  • 2 tbsp heavy cream

  • 1 tbsp salted butter

  • 2 ounces shredded cheese (I used a combination of shredded cheddar and shredded gruyere)

  • salt and pepper to taste


Place chopped cauliflower in a large steamer basket and steam in a large pot for 6-8 minutes until fork tender. Make sure it doesn’t get mushy, it should just be soft enough that a fork can easily poke into it.

Place steamed cauliflower in a blender or food processor. Add the heavy cream, butter and shredded cheese to the cauliflower and blend until smooth. Add salt and pepper to taste!
