These little Zucchini Tots were so good and the entire family gobbled them up! With just a few ingredients and 30 minutes, you can have these adorable bite-sized tots on your table!
Serves: 6 (4 tots per person)

2 cups shredded zucchini, 1 medium or 2 small
1 tsp salt
1 tbsp coconut flour
2 large eggs
1 cup shredded cheddar cheese
1/2 cup yellow onion, finely chopped
1 tsp smoked paprika
Preheat oven to 400 degrees and spray a mini muffin tin (24) with oil.
Place shredded zucchini on a large plate lined with paper towel. Sprinkle with salt, toss, and let sit for 15 minutes to give it time to release a lot of the moisture.
Once water has been released, put it in a large bowl and add the coconut flour. Toss to coat and add the eggs, shredded cheese, chopped onion and smoked paprika. Stir well with a spatula.
Place batter in muffin cups and bake in the oven for 15 minutes. Remove and let cool slightly before removing them from your muffin tin.
