Artichoke Arugula Salad

This is such a light and refreshing salad and pairs well with any dish.  The peppery arugula, lemony dressing and nutty parmesan create a great flavor combination.  This simple salad is sure to be a hit.

  • 5oz arugula
  • 6 oz jar marinated quartered artichoke hearts
  • 1 tbsp lemon juice
  • 2 tbsp honey
  • parmesan


Place arugula in a bowl.

Take artichoke hearts out of the jar, reserving liquid and put in the bowl with your arugula.  

Combine 2 tbsp of the reserved artichoke liquid, lemon juice and honey, whisk and pour over salad and toss.

Use a vegetable peeler to shave parmesan cheese on top of salad and serve.
