Balsamic and Lemon Tomato Arugula Salad

This is a super simple salad that is refreshing and would pair well with any entree.  


  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1/4 tsp coarse sea salt
  • fresh cracked pepper to taste
  • 5 oz arugula
  • 1 pint grape or cherry tomatoes, halved
  • zest of 1 small lemon
  • *optional* feta cheese


Combine olive oil, balsamic vinegar, salt and pepper in a small bowl and set aside.

Combine arugula, cherry tomatoes, lemon zest and optional feta in a large serving bowl.  Drizzle dressing on top, toss and serve.
