Greek Kale Salad

This is a super simple kale salad that has a lot of flavor and keeps well for leftovers for the next day.  


  • 10 ozs chopped kale
  • 1 pint cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, sliced thin
  • 1/2 cup crumbled feta


  • 1/2 cup olive oil
  • 1/4 cup fresh squeezed lemon juice
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • salt and pepper to taste


Chop kale and place in a large bowl.  Pour and few tablespoons of dressing into the bowl and massage kale for a minute or two to help soften it a bit.  Top with remaining ingredients and dressing.  Toss and serve!
