I love artichokes and they are fun for the kids to eat, and let's be honest, they love anything that they can dip in butter and I don't blame them! I usually roast them in the oven but since we were grilling crab legs we figured we would try these out. They were delicious!
- 2 lemons
- 4 large artichokes
- 1 tbsp olive oil
- 1/4 tsp salt
- freshly ground black pepper
- melted butter for dipping
Fill a large dutch oven with water and add the juice of 1 lemon. Trim leaves from the top of the artichoke and remove the outer leaves around the stem and trim the stem to make sure that it's flat on the bottom.
Place artichokes in lemon water and bring to a boil. Boil for 12-15 minutes. Transfer to a cutting board and let cool for 10 minutes.
Preheat grill to medium. Slice the artichokes in half lengthwise. Scoop out the choke (the hairy part in the middle). Brush entire artichoke with olive oil and sprinkle with salt and pepper. Grill the artichokes until evenly charred, about 5 minutes on each side.
Serve with a side of melted butter for dipping and a lemon wedge to squeeze over top.
