Nothing screams SUMMER quite like caprese salad. The colors are bright, the basil is so fragrant and the flavor combinations are so fresh tasting, especially in the summer when tomatoes and basil are easy to come by fresh from the garden.
- 1 lb grape or cherry tomatoes, halved
- 4 oz mozzarella, cut into bit sized pieces
- 1/3 cup basil, cut into ribbons
- 1 garlic clove, minced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- salt and pepper to taste
Combine ingredients in a medium sized bowl, toss and serve.
