Cucumber, Tomato and Avocado Salad

This was so flavorful and refreshing.  It is the perfect side for any dish and was great as leftovers the next day.


  • 1 English cucumber, chopped
  • 4 Roma tomatoes, chopped
  • 3 ripe avocados, chopped
  • 1/2 red onion, sliced thin
  • 1/4 cup cilantro, chopped
  • juice of 1 lemon
  • salt and pepper to taste
  • 2 tbsp olive oil


Place cucumber, tomatoes, avocados, onion and cilantro in a bowl.  Add lemon juice, olive oil and salt and pepper.  

Toss and serve.
