Roasted Artichokes

Artichokes are such a treat! My kids love them, probably because they get access to as much butter as they want, but they can be such a delicious side for everyone to enjoy!



Serves: 4

Prep time: 10 minutes, cook time 1 hr 20 mins

  • 4 artichokes

  • 4 garlic cloves, peeled

  • 4 tsp olive oil

  • 4 tsp lemon juice

  • salt


Preheat oven to 425 degrees. Rip 4 sheets of tin foil, enough to completely enclose each artichoke, and set aside.

Cut off bottom of artichoke so it can stand upright. Cut off top of artichoke so you can access the center, making sure to separate the leaves slightly.

Shove one garlic clove into the center of each artichoke.

Place artichokes in the center of each piece of tinfoil and drizzle each with 1 tsp olive oil, 1 tsp of lemon juice and a sprinkle of salt. Wrap each one tightly and arrange in a oven safe baking dish.

Roast for 1 hour and 20 minutes (if they are on the smaller side you can reduce the time by 10-15 minutes).

Remove from oven and let stand uncovered for 5 minutes before serving….they will be very hot!

Serve with melted butter (add some minced garlic to butter if you want!).
