Keto Thai Chicken Salad

I made this salad as a meal prep and it was so easy to throw together and it tasted amazing! I bought a rotisserie chicken from the supermarket but you could easily cook your own chicken breast or thighs and shred it yourself.

Prep Time: 10 minutes

Nutrition for 1 portion: 414 cals, 25g fat, 5g net carbs, 37g protein

  • 1 lb shredded chicken

  • 20 oz broccoli slaw (or regular coleslaw mix or another similar cabbage/veggie mix)

  • 1/4 cup chopped fresh basil

  • 1/2 cup chopped green onion

  • optional: sesame seeds for topping


  • 1/4 cup olive oil

  • 1/4 rice vinegar

  • 1 tbsp liquid aminos/soy sauce/tamari

  • 1 tsp sesame oil

  • 1 tbsp natural creamy peanut butter

  • 1/2 tsp salt

  • 1/2 tsp sriracha sauce

  • 1 tbsp minced fresh ginger

  • 1/2 tbsp garlic powder


Combine slaw, shredded chicken, chopped basil and green onions in a large bowl.

Combine all dressing ingredients in a measuring cup and whisk until well combined. Pour dressing over salad mix, toss to evenly coat and serve!
