Almond Parmesan Roasted Broccoli

Roasted broccoli has always been a staple veggie in our house and this is a fun and delicious way to dress it up in a different way.

  • 2 heads (20oz) broccoli, slice into florets

  • 2 tbsp olive oil

  • 3 garlic cloves, minced

  • pinch of red pepper flakes

  • 1/2 tsp salt

  • 3 tbsp sliced/slivered almonds

  • 2 tsp fresh lemon juice

  • 3 tbsp freshly grated parmesan cheese

  • lemon zest from 1/2 lemon


Preheat oven to 475 degrees. Line a baking sheet with foil for easy cleanup.

Slice broccoli into florets, making sure to cut them into thin pieces, not large chunks. Place in a large bowl.

Mix oil, garlic, red pepper flakes and salt in a small bowl and pour over broccoli. Toss well to evenly coat.

Arrange in a single layer on your baking sheet. Roast for 10 minutes, flip broccoli over, add almonds and place in the oven for an additional 10 minutes.

Remove from oven, sprinkle with lemon juice, parmesan cheese and lemon zest.
